I picked up some pretty ones on sale at HEB. I love to order them in restaurants but have never cooked it myself. I am thinking about doing them in my pressure cooker with a wine braise, and served in the reduced sauce over garlic mashed potatoes.

At least that is what I have in my mind, lol!

Any fabulous recipes out there in KU land?

I've made them and they were delicious. I looked at a bunch of recipes and sort of mixed them together. I do remember using a lot of red wine, shallots & garlic. I browned the ribs and cooked them in my Le Creuset Dutch oven in the oven at a really low temp for 3 or 4 hours. They were so tender and I could have eaten the sauce by itself. The worst part was smelling all afternoon and having to wait to eat it! What time is dinner? 😀

Mama, you are reading my mind! I'm looking at recipes right now and sort of taking the best sounding parts of each. I just added shallots to my grocery list, thanks for that. I love their mild flavor.

I am crazy about my Le Creuset but I'm looking for ways to use my pressure cooker more often and thought this would a perfect use for it. I mainly have used it for cooking beans (which makes them taste like they were cooked for hours).

Come on by around 6 or 7..I will have a nice glass of wine waiting just for you!
