I am looking for a tried and true Corn Dip recipe that can be served cold. Got one?

I am sure you have seen this one before, it is very popular and all over Pinterst. But it is really good. I fixed it last year for a super bowl pot luck and everyone loved it.

2 cans Mexicorn (drained)
16 oz. Sour Cream
1 cup real Mayonnaise
? - 1 bunch chopped cilantro (optional- some people hate cilantro)
3 ? 4 green onions-including green part (chopped)
2 cups shredded cheddar cheese
1 tsp. Cayenne pepper
1 tsp. Cumin
? tsp. Lime Juice

Mix ingredients all together. chill well before serving. Goes good with Scoop Fritos!

4 oz cream cheese, softened
1 pkg Ranch dressing mix
1 small can mexi-corn
1 small can chopped black olives
1 small can chopped green chilies

Mix, refrigerate, and serve with corn chips. I could eat it with a spoon. And it doesn't taste like it has black olives in it (although I love olives!)

1 can white corn
1 can black beans
1 can rotel
All drained
Cilantro
Garlic
Salt
Olive oil
All to taste.

Thanks! I am going to sort of combine ingredients from all these recipes and make one killer dip!

Southwest Corn Dip -

2 cans drained sweet whole kernel corn
1 large container of Sour Cream
1 cup Hellman's Mayo
1/3 Cup of finely diced cilantro
5 chopped green onions
2 cups shredded sharp cheddar cheese
1 package of softened cream cheese
1 can of fire roasted Rotel tomatoes, (drained)
1 tbsp. smoked paprika
1 tsp. Cumin
1 tsp. minced garlic
1 package of Ranch Dressing Powder
4 oz. can green chiles
1 tsp. fresh lime Juice

Ohhh, it's addicting, trust me. The recipe started with many less ingredients and I kept adding things over time! LOL
